BEFORE FIRST USE
Wash with hot, soapy water
Rinse thoroughly and dry completely
Although pre-seasoned, lightly wipe the cooking surface with oil to help initiate patina development
USING YOUR PRODUCT
PREHEAT & COOK
Preheating

Preheat gradually to prevent hot spots and potential warping

Select a burner close to the pan’s diameter for even heat distribution
-
Always begin on low to medium‑low heat
-
Your pan is pre‑seasoned and may be used without oil; however, adding a small amount of fat during early use is recommended to aid food release and seasoning development
CAUTION: Preheating at high heat may cause warping and uneven heating.
Cooking

Once preheated, increase temperature as required by your recipe and add food
-
The pan is ready when oil shimmers or butter foams
-
When cooking without fat, add a few drops of water–if they evaporate, the pan is ready
-
For thicker cuts of meat, poultry, or fish, cook closer to the center of the Comal for more even heat exposure
-
Avoid acidic foods (tomatoes, vinegar, citrus, wine, mustard), as they may strip seasoning. This does not damage the pan and can be corrected by re‑seasoning
-

CARING FOR YOUR COMAL

CLEAN, DRY & SEASON
Clean
-
Allow the pan to cool completely before cleaning
-
Hand wash only using warm water and a soft sponge or brush
-
Use a plastic scraper if needed to remove stuck‑on food
-
Dish soap may be used occasionally, but water only is recommended to preserve seasoning
-
Do not use abrasive cleaners or scouring pads
-
Do not soak or leave pans in standing water
For stubborn residue, simmer a small amount of water in the pan for approximately 5 minutes, scrape gently, discard water, and dry thoroughly.

After drying, lightly wipe the surface with oil to protect the steel and support continued patina development.
Dry

Dry immediately and thoroughly after cleaning

Dark residue on towels is normal and indicates seasoning development
How To Re-Season Your Pan

Remove food residue or rust using a brush or scraper
-
Apply a generous layer of vegetable oil to the cooking surface
-
Heat slowly over low heat, then increase until the oil reaches its smoke point
-
Turn off heat and allow the pan to cool naturally
-
Wipe away excess oil and resume cooking
The patina will continue to rebuild and improve with use.

Carbon steel pans are NOT dishwasher safe. Dishwashing removes seasoning and may cause rust, requiring re‑seasoning.
NATURAL PATINA
With regular use, IonTek™ carbon steel cookware develops a naturally nonstick patina. Color variations and surface patterns are normal and are a sign of proper seasoning.
